It is sometimes thought that Indian cuisine only has butter chicken and naan. Even though Indian cuisine is celebrated in various ways, the cuisine from southern India is the most exciting, fragrant and varied. Delicious South Indian dishes are created by blending tastes, textures, and customs in Indian cooking. The surprises come with this food, like crispy dosa from the South and sweet curries from Kerala.

Breakfast:
Rice and sambar are the main elements in an Indian meal.
South Indians often eat their midday meal on a banana leaf at many festivals and temples. It looks beautiful and feels beautiful to the touch. The usual midday meal is sambar, rasam, stir-fried veggies, lentil-vegetable curry, pickle and rice. There are times when I serve a papadam or mor kuzhambu to make the meal more interesting.
No matter where you are in South India, this meal starts with boiling lentils, then adding drumsticks, eggplant and okra, and lastly mixing in the typical spices such as mustard seeds and curry leaves.
Just as for many other food dishes in India, you can take rasam as a pepper drink or pour it over rice to make a unique and uplifting meal.
Kerala recipes include avial, where vegetables are mixed with coconut and yoghurt and erissery, made by combining pumpkin, lentils, grated coconut and cumin.

1. Due to the long history of Indian culture being shared, biryani is popular in South India today. Due to the influences of Mughal, Persian, and Arab cultures, each southern state developed the dish differently. We can tell that locals use typical local foods when making family meals.
We will cover the main kinds of South Indian biryani. Both Telangana and Andhra Pradesh are places where rice is grown.
Different preparations and tasty food make Hyderabadi biryani unique. Some recipes cook meat and rice together in just a simple marinade, and some include extra ingredients with cooked meat and rice. Because of saffron, caramelised onion, mint and various spices, this recipe gives risotto its unique taste and smell.
Hyderabadi Biryani with Mirchi Ka Salan is very tasty when prepared using chicken or mutton.

A South Indian dinner combines light foods, filling and typically comforting. The main dishes in the South are usually steamed, fermented or very mildly spiced, unlike the heavier North Indian meals. Still, Indian festivals often include many biryani, curry and dessert dishes.

- 1. Tiffin-style meals (Small Dinners)
- Households often have them, most commonly on weekdays.
- Idlis – Rice and lentil cakes cooked in steam
- Dosa – A rice-lentil batter is rolled into thin, crunchy crepes.
- Uttapam – Bread-like pancakes with onions, tomatoes and chillies on top
- Upma – Semolina is roasted and mixed with seasonings like mustard seeds, curry leaves and vegetables.
- Pongal – Warm rice with lentils mixed and served with black pepper, cumin and ghee
- Soft appams served with vegetable stew made from coconut milk
- They are normally paired with:
- Sambar – Food made from lentils, tamarind and mixed vegetables
- Coconut Chutney – Process the coconut with ginger, chillies and roasted spices.
